Lemon-Thyme Bruschetta

Servings: 10 | Prep Time: 10 minutes


  • 1 baguette; thinly sliced
  • 8 ounces ricotta cheese
  • Juice and zest from 1 lemon
  • Sea Salt
  • Freshly cracked black pepper
  • 8 sprigs fresh thyme


Preheat the oven to 425 degrees. Mix together the ricotta cheese and lemon juice and zest.  Add salt and pepper, to taste.   Toast baguette slices in the oven for 5-7 minutes until slightly browned and warm.  Spread liberally with seasoned ricotta.  Sprinkle with thyme and serve warm.

Lemon Garlic Dressing

Servings:  8-10 | Prep Time:  10 minutes


  • 1 garlic clove
  • 1 teaspoon salt
  • 4 tablespoons fresh lemon juice
  • 2 tablespoons white-wine vinegar
  • 1/2 teaspoon freshly grated lemon zest
  • Freshly ground black pepper
  • 3/4 cup extra-virgin olive oil


Mince garlic and mash to a paste with salt. In a bowl whisk together garlic paste, lemon juice, vinegar, zest, and pepper and whisk in oil until emulsified.  Dressing may be made 1 day ahead and chilled, covered. Bring dressing to room temperature before serving.
